Smoked Mozzarella Sticks

Smoked mozzarella sticks take the classic fried appetizer in a richer, more savory direction. Using smoked mozzarella cheese instead of plain mozzarella gives each bite a gentle smokiness that pairs beautifully with the crispy panko coating. The cheese pulls are just as gooey, and the extra flavor makes them feel special without any extra work.

Three Reasons to Try This Smoked Cheese Appetizer

  • The smoked mozzarella brings a deep, savory flavor that plain mozzarella can't match, so every bite tastes more interesting.
  • Panko breadcrumbs create a light, crunchy crust that stays crisp longer than regular breadcrumbs.
  • The seasoned flour with garlic salt and black pepper adds a savory kick that complements the smoky cheese.

Key Ingredients for Smoked Mozzarella Sticks

  • Smoked mozzarella is the star here. Look for a firm, low-moisture version so it melts slowly and doesn't turn the coating soggy. If you can't find it, regular mozzarella works, but you'll lose the smoky flavor.
  • Panko breadcrumbs give the coating its signature crunch. They're coarser and lighter than standard breadcrumbs, so they fry up crisp without absorbing too much oil.
  • Garlic salt seasons the flour mixture. It adds both garlic and salt in one step, so you don't need to measure them separately. Adjust the amount to your taste.

Kitchen Tools for Frying Mozzarella Sticks

  • A heavy pot or Dutch oven for frying, deep enough to hold 3 inches of oil
  • A candy thermometer to keep the oil at a steady 350°F
  • A wire rack for draining the fried sticks so they stay crisp
  • Three shallow bowls for the breading station

Tips for Perfectly Crispy Smoked Mozzarella Sticks

  • Cut the cheese into sticks about 2 inches long and 3/4 to 1 inch thick. If the cheese has rounded edges, trim them off and save the scraps for a salad.
  • Set up a breading station with three bowls: milk, seasoned flour, and panko. Dip each stick in milk, then flour, and let it rest for about 5 minutes before the second dip.
  • After the second dip into milk and then panko, let the sticks rest a few minutes before frying. This resting time helps the coating stick firmly to the cheese.
  • Heat the oil to 350°F and fry the sticks just until golden brown. Drain them on a wire rack, not paper towels, so they stay crisp.

Smoked Mozzarella Stick Variations to Try

  • Swap the smoked mozzarella for regular mozzarella if you prefer a milder flavor.
  • Add a pinch of cayenne pepper to the seasoned flour for a spicy kick.
  • Mix grated Parmesan into the panko for an extra savory, nutty crust.
  • Use gluten-free panko and gluten-free all-purpose flour to make these sticks gluten-free.

What to Serve with Smoked Mozzarella Sticks

  • Marinara sauce for a classic pairing that cuts through the smoky cheese
  • Ranch dressing for a cool, creamy contrast
  • A simple green salad with lemon vinaigrette to balance the richness
  • Roasted red pepper dip for a sweeter, smoky option

How to Store Leftover Smoked Mozzarella Sticks

Leftover smoked mozzarella sticks should be stored in an airtight container in the refrigerator. The coating will soften as they sit, so they're best eaten within a few days. To keep them from sticking together, place a sheet of parchment paper between layers.

Can You Freeze Smoked Mozzarella Sticks?

You can freeze the breaded, uncooked sticks before frying. Arrange them in a single layer on a parchment-lined baking sheet and freeze until firm, then transfer to a freezer-safe bag. When you're ready to cook, fry them straight from the freezer; the oil temperature will drop slightly, so give them a little extra time until golden.

Best Way to Reheat Smoked Mozzarella Sticks

The best way to reheat fried mozzarella sticks is in the oven or air fryer. Place them on a wire rack over a baking sheet and heat until the coating crisps up again. The microwave will make them soggy, so skip it.

Instructions

  1. Add enough vegetable oil to fill a pot about three inches deep. If you use a smaller pot, you will need less oil. Heat oil until 350 degrees. Cut Mozzarella into large sticks, about 2 inches by 3/4 to 1 inch.
  2. If your cheese is rounded you will need to trip off the rounded edges, you can place these trimmings into a salad. I like to use thicker sticks for this. Set up a breading station consisting of 1 bowl of milk, one bowl of seasoned flour, and one bowl of Panko Bread Crumbs.
  3. In a small bowl add flour, black pepper, and garlic salt. Stir to combine seasoned flour. Dip sticks into milk, then seasoned flour, coating well. Shake off excess. Place the cheese stick on a rack. Allow cheese stick to rest about 5 minutes before dipping into the milk again, and then dip into Panko breadcrumbs. Coat well. Allow cheese stick to rest for a few minutes before cooking. This time of resting helps the coating glue onto the food. Fry cheese stick in hot oil. Fry until just golden brown. Remove from hot oil and drain on a wire rack. Serve immediately.

Frequently asked questions

Can I use regular mozzarella instead of smoked?

Yes, regular mozzarella works, but you'll lose the smoky flavor that makes these sticks distinctive. If you want to keep some smokiness, you can add a few drops of liquid smoke to the milk or flour, though it won't be exactly the same.

Why do my cheese sticks leak during frying?

Leaking usually happens when the coating isn't thick enough or the oil is too hot. Make sure to double-dip and let the sticks rest between coats so the breading adheres. Also, keep the oil at 350°F; if it's too hot, the cheese can burst through before the coating sets.

How do I know when the oil is at the right temperature?

A candy thermometer is the most reliable way to hit 350°F. If you don't have one, drop a small piece of bread into the oil. It should sizzle and turn golden in about 30 seconds. If it browns too quickly, the oil is too hot.

Can I bake these instead of frying?

You can bake them, but the texture will be different. Place the breaded sticks on a wire rack over a baking sheet and bake at 425°F until golden, about 10 minutes. They won't be as crisp as fried, but they'll still be tasty.
